I’ve wanted to try make a cauliflower pizza base for ages. But…er… I didn’t actually buy any cauliflower this weekend so that shot down that plan!
Instead I made a pizza omelette which is something I’ve loved making since Home Economics class aged 14.
Anyhoo, it’s one of the easiest things to make and jazzes up your standard omelette.
2 tablespoons tomato purée
3 tablespoons soya milk
Veg for toppings (I used onions & peppers)
Cheddar cheese (grated)
A pinch of oregano
Chilli flakes (if you fancy a bit of spice!)
Fry the veg toppings first to soften them. Beat the eggs (add some milk or soya milk if you like).
Pour the egg mix into a pan. When it looks set spread the tomato purée and sprinkle the oregano and chilli flakes. Then add your veg and top with cheese and some black pepper.
Finish it off under the grill until the cheese melts.
And voila! Easiest lunch ever!
